The gravel feels completely different at race pace. When doing 25-30 miles an hour versus 17 mph, everything feels way more rough and loose, making familiar sections feel unfamiliar during races.
Dust conditions can be severe with visibility so bad that you can't see the front of the group or judge distances to other riders.
The surface makes it difficult to make quick adjustments - you can see crashes coming from a distance but can't stop or get around them easily.

50 psi on 38mm tires with aero wheels from Princeton, paired with super stiff road shoes on Canyon Grail with 34x40 gearing setup.
Continental Race King 2.2 inch wide tires (57mm) can be fitted on gravel bikes if the frame allows, with many top tier races now seeing 50mm tires where 45mm used to be considered wide.
Wider tires like 2.2 inch mountain bike tires on gravel bikes let you not care as much what you're riding over - there's basically nothing you can't ride full pelt at on rocky terrain.
